Between the ice storm and a hectic work week, I didn't make it to the gym at all last week! 😭 So I made sure to start the week off strong and come in during my lunch break to get my 30 minutes in today! This is something I need. This releases the stress. This makes me not want to kill everyone. 😇 The saying goes: Instead of saying you don't have time for something, say it's not a priority and see how you feel about it. Well, last week, getting to the gym wasn't a priority over my job, but that was one week. One hectic, shortened, natural disaster week. It's not gonna mess up my gym flow for all the other weeks! I'm not even gonna be hard on myself for last week. I’ve had a slight obsession with sweet potatoes lately and it doesn’t seem to be ending ANYTIME soon! Why? Well...first, they taste F$%ing awesome! Second, they’re SUPER easy to make and versatile so you can do so much with them. And third....they’re kinda awesome for you!! I love this nutrition plan that I’m following because not only does it tell me WHAT to eat, how much of it to eat and when throughout the day to eat certain food groups to maximize my results, but I also get food lists that tell me what the good, better and BEST options are nutritionally! Needless to say, when it comes to carbs, sweet potatoes are right at the top of the list! So while I can have corn tortilla’s and pasta on this plan, I’m choosing not to have them often and instead go for goods that pack more nutritional punch! When I went through a test group in November I noticed how much certain foods affected my energy levels and mood. I’m aiming for the best of both.....and I don’t factor that into a “diet” me that’s just living a healthy, fulfilling lifestyle! If your nutrition plan leaves you’re probably doing something not quite right. This is just Meal 2 of 6 for me today....and it packed a serious flavor punch! Btw.....I made a big batch of these spicy sweet potato cubes and am using them to go with various different meals throughout the week! Here’s the recipe if you’re looking to try a batch yourself: 2-3 medium sweet potatoes cut into even sized cubes 2 tsps sea salt 1 tsp garlic powder 1 tsp paprika 1/4 tsp chili powder 1/4 tsp ground cumin 1/4 tsp cayenne pepper 1/4 cup coconut oil (or EVOO) -> Preheat oven to 400 degrees. Line a baking tray with parchment paper. -> Toss sweet potato cubes with oil and seasonings. -> Pour sweet potatoes on parchment paper and arrange so they are evenly spread out (not clumped together) -> Bake for 30-40 mins or until fork tender.
