I needed a pick me up today so colorful food was my choice🥒. Well...and maybe a Starbucks green tea too💁‍♀️ . This Gluten Free Chicken Pad Thai has been in my rotation for a couple of years. I have tweaked the sauce and veggie choice each time to fit our likes..and my kids actually enjoy helping prep this one🙌🏻 . Chicken Pad Thai 1 package gluten free Thai rice noodles 3-4 Boneless skinless chicken breasts cut in small pieces 3 eggs 1 red bell pepper sliced thinly 1 pkg. matchstick carrots (less if you prefer) 4-5 green onions (green and white part sliced reserving green for topping) 1/2 c. Mushrooms 1 bunch of cilantro chopped 1/2c. Chopped cocktail peanuts 2-3 garlic cloves chopped 2 tbsp. Vegetable oil Sprinkle of sesame seeds optional . Sauce: 1/4 c gluten free soy sauce 1/4c. Light brown sugar 2tbsp. Rice wine vinegar 1 lime juiced . Boil large pot of water and cook rice noodles according to pasta directions. Drain, rinse and set aside. . Heat a large skillet over medium heat with vegetable oil. Add in chicken and sauté until thoroughly cooked. Remove from pan and set aside. . Add in red pepper, carrots and mushrooms. Cook until softened. Add in green onion (white part only) and garlic. Sauté for 2-3 minutes. . In middle of pan, scramble eggs mixing into veggies once cooked. Cook over low heat for 5 minutes. . In a small bowl mix together soy sauce, brown sugar, lime juice, and rice vinegar. . Add drained noodles to veggie and egg mixture. Pour sauce over and stir to incorporate. . Top with crushed peanuts, green onions, cilantro and sesame seeds. Enjoy!

I am not doing this to lose weight although that’s a bonus I am doing this for my health! It’s only been 7 weeks and I have already noticed a difference in my skin, my sleeping pattern, my hair etc just by cutting out dairy, gluten and sugar. It’s something I should’ve done a long time ago but I was never told by any doctor that cutting out these foods could increase my chances of becoming pregnant or making me feel better! I was just prescribed drugs! If there is a way of healing myself naturally I’m going to try my best to do so! Here’s to lifestyle changes.
