Lunch today is corn tortillas with refried black beans🌞 I used the corn tortilla powder mix and then pressed them with my tortilla press and fried them. They taste so much fresher when you don’t buy them pre made!!! 🦄 Last nights dinner: Almond Crusted Chicken Piccata 🤤 Really really good. Sides: Cauliflower Rice and Grilled Asparagus 🙌🏼 #whole30approved #a_doseofjo👇🏼 ....... 🦄The key to cooking this bad boy is to marinate the chicken for at least 5 hours. Adds a ton of flavor. I used fresh lemon juice, salt & pepper, and Ghee. To spread the Ghee evenly, melt in microwave for 3sec. Full recipe in my story 😬 xoxo!
okay everyone. i'm feeling on top of the world right now!!! the photos on the left were taken Jan 9, 2017, and the photos on the right were taken today (Feb 22, 2018)! i am seriously in disbelief; i can't stop looking at the difference in my body within about a year. at the beginning of it all, i had little hope that i'd ever be able to turn my life around. this has hands down been the most difficult year of my life, but at the same time the most important one. i have learned so much, and grown so comfortable with myself and who i am. i love myself so much and it feels SO AWESOME. it's the best feeling ever! being able to wear tight clothes for once & not worry about my muffin top of my fat pouring over my pants is a HUGE one. my wardrobe used to consist of only loose-fitting t shirts and tank tops, and high waisted jeans that would "hide" my fat. i was so unhappy. so insecure with not only my external self but also my internal self. i didn't know who i was. • • today i feel like a completely different woman. it's indescribable how much i never want to return to my old eating, thinking, and living habits. i still have more room for improvement, but today i found these undies packed deep in my drawer and i remember saving these old gross pair specifically for this reason: progress pics! i just can't describe how in awe i am right now. i'm SO proud of myself.
