Chicken crust supreme pizza! Ingredients: 1 pound ground chicken, 1/4 cup Parmesan cheese, 1/4 cup shredded mozzarella cheese, 1 teaspoon Italian seasoning, 1/4 teaspoon black pepper, then anything you want to top the crust with •Preheat oven to 400 degrees •Mix the ground chicken, cheeses, and spices in a bowl (I used my hands) •Line pizza pan or cookie pan with parchment paper and spray lightly with cooking spray •Put the ground chicken mixture on the pan lined with parchment paper. I placed another piece of parchment paper on top of the mixture and rolled it out using a rolling pin. Sad post😢-this is the first keto recipe I have made that I don’t really like😩😭. The Meatza ground beef crust is way too thick for my taste. . I can see potential and It’s worth making again if I make a VERY thin meat crust. The recipe called for 2 lbs and I don’t even know if I would use 1 whole lb. I would want to almost burn the meat to try and make it more crispy. I think that might be good🤔. . I’m going to power through my lunches this week so it doesn’t go to waste. I love hitting up @safewaycanada's same-day meat clearance section for meal prep. 0.75 kg beef hearts, 1 kg ground beef, 1 kg chicken legs and thighs, plus some odds and ends (coleslaw mix, cream cheese, shirataki noodles) for under $30! I'm using the ground beef and chicken this week, and freezing the beef hearts for next week. All this food will make me at least 10-15 meals ($2-3 per portion). Mix together and bake on 350 for 10 mins. I almost indulged, too. I’m talking, I had loaded up the Dominos website and was about to start ordering when I snapped myself out of it. I decided to make these pizza egg muffins instead. I am really proud of myself for resisting the temptation, for making a Keto option. I still struggle with my binge eating impulses and my carb addiction. Not every day, but once in a while. I want to thank all of you, because honestly it was this amazing #ketofam and your inspirational posts that helped me stay strong tonight. I love you. 💖💖💖 RECIPE: Preheat oven to 400F Grease a muffin tin or use paper liners. Put a slice of pepperoni in each tin. Sprinkle cheddar cheese on top. Put another slice of pepperoni, then sprinkle mozzarella cheese, then a 3rd pepperoni slice. Mix 12 eggs, 1/2tsp of garlic powder, 1/4tsp of onion powder, 1tsp of salt, and Italian seasoning to taste. Pour mixture over the pepperoni and cheese. Put in the oven. I took mine out after 10 minutes and sprinkled Parmesan cheese on top, then baked for another 15 minutes. 😍🍕 Macros (per muffin): 170 calories, 1g carbs, 13g fat, 13g protein. #ketomacros #iifym
