My mantra of today is that I’m stronger than I think I am! Something about @studiotoneitupchyna ‘s workouts ALWAYS push me so hard! I always find myself thinking in the middle “there’s no way I can do this.” BUT we keep going and we keep trying and we always come out the other side stronger (and exhausted)! On the table: 2 point waffles! . Details: while I know not many people including myself would have time to make this on a Monday morning, this is totally doable by making it ahead! I used a mini waffle maker but you could also make it as pancakes. To make the batter, mix 2 eggs + 1 mashed ripe banana + 1/2 cup @kodiakcakes protein pancake mix + vanilla extract + cinnamon. This made 2 servings for 2 points per serving! Happy Monday! I just wanted to sincerely thank you all for checking in with me over the last couple of weeks. I am still pregnant at the moment (39 weeks...or maybe 40 weeks. Apparently there was a discrepancy at my first appointment that they didn’t tell me about... 🤷🏼‍♀️). I have been spending my time with family and friends soaking up quality time and enjoying every minute of the change of season. Baby boy will be here any day, so I am resting up for the big event and for the switch to being a family of 4!! I am also so much more comfortable thanks to my chiropractor and acupuncturist. They have been my absolute life savers!!! But again, I am so incredibly grateful for you all for your support. What an amazing tribe I have found here ✨ • • • A couple of weeks ago, one of my best friends in all the land ( @kariaynpeach) drove up from Richmond to visit with me for a couple of hours and bring me my most favorite meal! This is a classic Richmond food truck meal from Christopher’s Runaway Gourmet. If you have had the tarragon chicken salad before, then you just know how amazing it is and why I would be craving it so badly! My sides are their fabulous cole slaw and marinated cucumbers. Happy Monday! You know that thing that you've done before? So, it's easier to go do again. Well how about the thing(s) you've never done and the process of having to do it... scares you. So you'll start to think of excuses and a way out or around it. Let's put our heads together and find a way to make it happen. We ALL have a small or long list of to-dos. What did everyone prep this week? What you prep for at the beginning of the week completely determines your success for the week. If healthy foods are ready and available to you, you are more likely to grab those things. I prepped some random snacks to have on hand this week so it would keep my unhealthy snacking at bay (halloween candy tempting anyone else?) See below for 4 easy snacks I have ready to go: . 1- chopped cucumbers + hummus . 2- sliced apples with lemon . 3- fresh bananas + PB . 4- homemade trail mix with mixed nuts (unsalted) + dried cranberries ( @madeinnature uses apple juice to sweeten instead of sugar). Be careful with already made trail mixes- they are oftentimes loaded with sugar and added ingredients. .
